Whether your family celebrates Easter with a large traditional dinner or a casual brunch, many prepare their springtime holiday spread with traditional family favorites.

Preparing dishes the day before is an easy way to create a stress-free Sunday, leaving extra time for family and friends. While observing the arrival of spring, try a simple salad at your gathering. This light and citrus flavored salad will satisfy even the most confirmed Easter bunny chocoholic.

Easter 7-Up Salad

  • 2 small packages of lemon jello – regular or sugar free
  • 2 cups of boiling water
  • 2 cups of 7-Up soda pop – regular or sugar free
  • 2 tablespoons of sugar
  • 1 cup small marshmallows
  • 3 bananas
  • 1 small can crushed pineapple
  • 1 egg
  • ½ cup sugar
  • 2 tablespoons flour
  • 1 tablespoon butter
  • ½ pint whipped cream

Photo Copyright Jason LugoMix jello with boiling water and dissolve. Stir in 2 tablespoons of sugar and 7-Up. Refrigerate until the mixture is set but still liquid enough to add marshmallows, pineapple (drain juice and save for topping) and bananas. Stir these ingredients together and return to the refrigerator for a firm set.

For the topping, combine ½ cup of saved pineapple juice, 1 beaten egg, ½ cup sugar, flour and butter in a sauce pan. Bring to a low boil and thicken. Cool slightly to add whipped cream. Mix well then spread generously over firmly set jello. If desired, garnish with lemon zest or dust with crushed lemon drops.
